Our savory zucchini and ham pancakes without flour and with sunflower seeds taste great at any time of the day – whether for breakfast, lunch or dinner. On top of that, the recipe does not require any flour at all, as we use nutrient-rich oatmeal instead. Enjoy your meal!

ingredients

  • 120 g tender oat flakes
  • 8 Eggs
  • 1 tsp dried thyme
  • 250ml milk
  • 600 g Zucchini
  • 150 grams of cooked ham
  • 1 clove of garlic
  • Salt pepper
  • Nutmeg, freshly grated
  • 4 EL neutrals Öl
  • 30 g sunflower seeds

preparation

  1. Put the oatmeal, eggs and thyme in a mixing bowl, gradually add the milk and mix vigorously with the whisk to form a smooth batter. Cover and leave to swell for 10 minutes.
  2. Meanwhile, wash the zucchini and grate coarsely without the stalks. Cut the ham into strips. Peel and press the garlic.
  3. Mix the shredded zucchini, ham and garlic into the pancake batter and season with salt, pepper and nutmeg.
  4. Heat 2 tablespoons of oil in each of two pans. Pour in half of the batter and spread evenly. Scatter the sunflower seeds on top and bake the pancakes over medium-high heat for 3-4 minutes, until the batter starts to set. Flip the pancakes and cook on the other side for another 3-4 minutes.
  5. Divide the pancakes with a spatula and transfer to a board. Served with a fresh leaf salad.

Recipe Tips

1. If you have trouble turning the pancakes whole, use a spatula to divide them into quarters and turn them over. Vegetarians replace the ham with 120 g crumbled feta cheese.

2. Vegetarians can use a vegetarian alternative instead of ham, omit the ham or choose another topping (e.g. paprika) instead.
