Low Carb Zucchini-Lasagne
Do you love lasagna, but eat low carb or are you on a diet? Then you should definitely try our delicious zucchini lasagne. Instead of lasagne sheets we use low-calorie zucchini and instead of a powerful béchamel sauce we use ricotta.

for 4 servings
- 800 g courgettes (green and yellow as you like)
- 2 tbsp olive oil
- salt
- 1 onion
- 1 clove of garlic
- 400 g ground beef
- 1 Dose Pizza (400 g)
- salt, pepper, sugar
- 2 Eggs
- 200 g Ricotta
- 2 packs of mozzarella (250 g)
- fat for the shape
- 4 tablespoons grated Parmesan
preparation
- Clean, wash and slice the courgettes lengthways. Fry the slices in a grill pan in a little olive oil in batches on both sides, season with salt and remove.
- Peel the onion and garlic, cut finely and sauté in about 1 teaspoon olive oil. Add the minced meat and stir-fry until crumbly. Add the tomatoes, simmer for 5 minutes and season with salt, pepper and a pinch of sugar.
- Preheat the oven to 200°C. Mix the eggs with the ricotta and cut the mozzarella into thin slices. Layer the zucchini slices, tomato-minced meat sauce, ricotta and mozzarella alternately in a greased ovenproof dish, finish with a layer of zucchini slices, sprinkle with the Parmesan and bake in the hot oven for approx. 30 minutes
