Breakfast Recipe: Vegan Wholemeal Pear Waffles

for 6 servings
  • 350 ml sweetened almond milk
  • 1 1⁄2 tbsp lemon juice
  • 250 g whole wheat flour
  • 2 1⁄2 tsp cream of tartar baking powder
  • scraped pulp from 1 vanilla bean
  • 2 tbsp brown sugar
  • 60 ml Coconut fat
  • 1 ripe pear
  • 20 g dried goji berries
  • 2-4 EL Maple Syrup
  • Vegetable margarine for the waffle iron

preparation

  1. Mix together the almond milk and lemon juice. Mix the flour, baking powder, vanilla pulp and sugar.
  2. Melt the coconut oil and mix with the almond milk mixture. Mix liquid and dry ingredients together. Peel and grate the pear. Chop the goji berries and fold into the batter along with the pear.
  3. Fry the batter in a preheated, greased waffle iron until golden brown waffles. Drizzle the waffles hot with maple syrup and serve.

Recipe Tips

Instead of the goji berries, the waffles also taste very good with dried cranberries.
