Vegan and delicious: Flammkuchen with zucchini and tomatoes

Our vegan tarte flambée with zucchini and tomatoes is quick to prepare and provides you with many important nutrients and vitamins. For example, zucchini is very low in calories, but at the same time rich in calcium, iron, magnesium and vitamins C and A. Rocket is a good supplier of folic acid. When combined with the other ingredients, you get a delicious meal for work that’s healthy at the same time.

- 1 package Tarte flambée dough (vegan; finished product from the refrigerated counter, 260 g)
- 1 Zucchini
- 150 g Cocktailtomaten
- 1 small red onion
- 60 g almond butter
- a few squeezes of lemon juice
- 50ml of water
- 1 handful of arugula
preparation
- Preheat the oven to 220°C. Halve the Flammkuchen dough, roll into two ovals and place on the baking tray lined with baking paper.
- Wash the vegetables. Cut off the ends of the courgettes, slice or grate the courgettes lengthwise into thin strips. Halve the cherry tomatoes, peel the onion and cut into rings.
- Mix the almond butter with lemon juice and water until smooth and spread on the Flammkuchen dough. Season with salt and pepper. Spread the vegetables on top and bake the tarte flambée in the oven for 12-15 minutes. Sprinkle with the arugula to serve.
