Vegan Muffin Recipe: Cherry Marble Muffins

ingredients

for 12 servings
  • 1 large jar of sour cherries (720 ml content)
  • 30 g vegan dark chocolate
  • 80 ml vegetable oil
  • 1 tsp lemon juice
  • 150 ml almond milk
  • 120g brown sugar
  • 150 g Dinkelmehl (Type 630)
  • 3 tbsp cornstarch
  • 1⁄2 pack cream of tartar baking powder
  • 2 Tsp Cocoa Powder
  • Also: muffin tin (12 cavities), vegetable margarine for greasing

preparation

  1. Preheat the oven to 180°C and grease the muffin tin. Pour the cherries into a sieve, drain and collect the juice. Finely chop the chocolate.
  2. Mix the vegetable oil, lemon juice and almond milk with 100 g sugar well. Mix the flour, 1 tablespoon of starch and the baking powder together and quickly mix with the wet ingredients.
  3. Divide the dough in half, mix 100 g cherries under one half of the dough and fill the muffin tin.
  4. Mix the remaining batter with the cocoa powder and the chopped chocolate, place on the light batter and carefully pull through with a fork. Bake the muffins in the oven for 25-30 minutes and let them cool on a wire rack.
  5. Mix the remaining starch with 5 tablespoons of cherry juice. Boil the rest of the juice with the remaining sugar, add the mixed starch and boil again. Add the cherries, heat briefly and serve with the muffins.
