Vegan Burger Recipe: Black Bean Burger with Guacamole

- 600 g black beans (canned)
- 1 onion
- 1-2 cloves of garlic
- 1 large bunch of coriander greens
- 1 THE Tomatenmark
- 5–6 EL Maismehl
- Salt pepper
- 1/2 tsp hot paprika powder
- 1/2 tsp dried oregano
- 1/2 tsp ground cumin
- 1 large ripe avocado
- 2 tbsp lime juice
- Chiliflocken
- 1-2 vine tomatoes
- 4 tablespoons neutral vegetable oil
- 4 Burger Buns
preparation
- Drain the beans well in a colander. Peel onion and garlic and chop finely. Wash the cilantro, shake dry and finely chop the leaves.
- In a bowl, mash the beans with a potato masher, not too fine. Add the onion, garlic, half the chopped cilantro, tomato paste and cornmeal and mix well. Season to taste with salt, pepper, paprika, oregano and cumin.
- For the guacamole, halve the avocado, remove the stone and scoop out the flesh from the skin. Mash finely with the lime juice with a fork and season with salt and chilli flakes. Stir in the remaining coriander. Wash the tomatoes and cut them into thin slices.
- Heat the oil in a coated pan. Form 4 patties from the bean mixture and fry them for 3-4 minutes on each side.
- Halve the burger buns, toast the cut sides and spread each half with guacamole. Cover the bottom halves with tomato slices and lightly salt. Place a bean patty on top and cover with the top half of the bun.
