Spice cookies with oatmeal

Ready, set, go! For our spice biscuits, we use oat flakes and ground almonds instead of wheat flour. So that the cookies don’t taste bland, we add spices like cinnamon, ginger and nutmeg.

  • 120g softened butter
  • 100 g raw cane sugar
  • 1 Ei (M)
  • 100 g blanched ground almonds
  • 140 g coarse oat flakes
  • 1/2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp nutmeg
  • salt

preparation

  1. Place the butter, sugar and egg in a mixing bowl and beat until light and creamy using the hand mixer. Add the almonds, rolled oats, baking powder, spices and 1/2 teaspoon salt and mix quickly to form a smooth batter. Cover the dough and chill for 30 minutes.
  2. Preheat the oven to 175°C. Cover a baking sheet with parchment paper. Take tablespoon-sized portions from the dough and shape into balls. Place the dough balls on the baking sheet and flatten. Put the tray in the oven (middle) and bake the biscuits for about 10 minutes. Remove, pull off the tray with the baking paper and let cool on a wire rack.
