  • 1 kg Zucchini
  • 100 g almond butter
  • 1 onion
  • 1 clove of garlic
  • 1 bunch of parsley
  • 160 g smoked tofu
  • 1/2 juice of a lemon and some zest
  • 5 tbsp olive oil
  • 1 tsp lemon juice
  • some salt and pepper

preparation

  1. Mix together the almond butter and water.
  2. Wash, dry and finely chop the parsley.
  3. Finely chop the smoked tofu, onion and garlic.
  4. Heat 2 tablespoons of oil in the pan, fry the tofu for about 3 minutes and add the onion and garlic. Add the parsley, lemon juice and zest and almond butter, season well and let the mixture boil up briefly.
  5. Wash and spiralize the zucchini into spaghetti. Mix olive oil and salt and carefully fold into the sauce. Let it go – done!
