- 1 kg Zucchini
- 100 g almond butter
- 1 onion
- 1 clove of garlic
- 1 bunch of parsley
- 160 g smoked tofu
- 1/2 juice of a lemon and some zest
- 5 tbsp olive oil
- 1 tsp lemon juice
- some salt and pepper
preparation
- Mix together the almond butter and water.
- Wash, dry and finely chop the parsley.
- Finely chop the smoked tofu, onion and garlic.
- Heat 2 tablespoons of oil in the pan, fry the tofu for about 3 minutes and add the onion and garlic. Add the parsley, lemon juice and zest and almond butter, season well and let the mixture boil up briefly.
- Wash and spiralize the zucchini into spaghetti. Mix olive oil and salt and carefully fold into the sauce. Let it go – done!
