Recipe for vegan and delicious banana bread

You love banana bread, but eat vegan? No problem with our delicious vegan banana bread. The recipe not only tastes incredibly good, but also does not contain any animal products such as eggs and cow’s milk.

Do you love banana bread as much as we do? Then why not try our delicious vegan banana bread, which is perfect for breakfast brunch or afternoon coffee. The recipe does not contain any eggs or cow’s milk – and not only vegans like it, but also all other banana bread fans.

ingredients

  • 3 ripe bananas
  • 100 ml soy or oat milk
  • 1 TL Vanilleextrakt
  • 100 ml rapeseed oil
  • 200 g wholemeal spelled flour
  • 150g brown sugar
  • 1 tbsp cornstarch
  • 2 teaspoons of baking soda
  • 1 pinch of salt

preparation

  1. Mash the bananas and mix with the oil, milk and vanilla extract.
  2. Now mix flour, sugar, baking powder, cornstarch and salt and slowly add to the banana mix. Mix well.
  3. Pour the dough into a loaf pan and bake at 180° C for approx. 45 – 60 minutes.

Recipe Tips

You can refine the basic recipe as you wish. Small vegan chocolate pieces, which you mix into the dough at the end, are particularly tasty. If you like it a bit healthier, you can use fruits like blueberries or currants, which give your banana bread a juicy note. For more bite, wonderfully healthy walnuts or hazelnuts are suitable.

Freeze Banana Bread

Ihr Bananenbrot können Sie bei Bedarf auch einfrieren. Portionieren Sie den Kuchen einfach und verpacken ihn luftdicht in einer Plastiktüte. Frieren Sie das Banana Bread am besten zeitnah ein, wenn es noch frisch ist. Im Gefrierschrank ist das Brot vier bis sechs Monate haltbar.
