Stuffed round zucchini with cheese and rice filling
We are big fans of zucchini. The pumpkin plant is not only low in calories (17 kcal per 100 grams), but also rich in vitamins and minerals such as calcium, magnesium and iron. Stuffed zucchini from the oven, for which you only need a few ingredients, taste particularly delicious. We opted for a rice and cheese filling that is refined with spring onions and sage.

- 8 round vegetables Zucchini (Rondini; approx. 800 g)
- Salt pepper
- 1 bunch of spring onions
- 80 g scamorza (smoked mozzarella; substitute other smoked cheese)
- 80 g parmesan (in one piece)
- 8 sage leaves
- 2 tbsp olive oil
- 600 ml vegetable broth
- 160 g Langkornreis
preparation
- Clean and wash the courgettes, cut off the top of each and hollow out the courgettes slightly with a teaspoon or ball-type cutter. Set the hollowed-out flesh aside. Par-cook the zucchini in boiling salted water for approx. 8 minutes. After the 4 mins add the lids. Drain and set aside, hollowed-out side down.
- Roughly chop the leftover zucchini. Clean, wash and cut the spring onions into rings. Cut the scamorza into small cubes and grate the parmesan. Wash the sage leaves, pat dry and cut into fine strips.
- Heat the olive oil in a saucepan and sauté the spring onions with the sage for approx. 2 minutes. Add the zucchini leftovers and a dash of vegetable stock and simmer for 5 minutes. Pour in the remaining vegetable broth and bring to the boil. Add the rice and cover and leave to swell for approx. 20 minutes over a low heat.
- Meanwhile, preheat the oven to 180°C. Stir the scamorza and parmesan into the rice and season with salt and pepper. Fill the courgettes with the rice and cheese mixture, place in an ovenproof dish and cook in the oven on the middle shelf for approx. 30 minutes. 5 minutes before the end of the cooking time put the zucchini lid on.
