- 1 kg organic rainbow trout (ready to cook, 2 large or 4 small trout)

- 8 slices of Serrano ham

- 100ml milk

preparation
- Rinse the trout inside and out, pat dry, season. Wash and chop herbs. Peel and grate the horseradish. Squeeze lemon. Preheat the oven to 200 degrees (180 degrees for a fan oven).
- Mix herbs with horseradish. Stuff into the trout. Drizzle with lemon juice. Wrap each trout in 2 or 4 slices of ham. Place on a baking sheet (lined with parchment paper) and bake in the oven (or grill outside) for about 25 minutes.
- Peel and dice the parsnips. Heat 1 tbsp butter, sauté parsnips and peas. Pour in the milk and 125 ml of water, season and cook for about 15 minutes. mash vegetables. Slowly heat the sesame and remaining butter. Serve trout with butter and puree.
