Delicious fish dish: Pollock fillet on mashed potatoes with herb sauce
Healthy Saithe
Fish is healthy and provides you with important vitamins and nutrients. Saithe is a low-fat fish, which is why, in contrast to other types of fish such as salmon, it contains relatively few omega-3 fatty acids. But it is rich in vitamin B2 and proteins. - 4 Sea salmon fillets (150 g)
- 2 tbsp lime juice
- 800 g mealy potatoes
- salt
- 1 TL Dijonsenf
- 60 ml white balsamic vinegar
- pepper from the grinder
- 1/2 bunch of flat-leaf parsley
- dill and basil
- 4 sprigs of mint
- 2 anchovy fillets (in salt)
- 1 tbsp capers
- 6 tbsp olive oil
- 125 g cream for cooking (15% fat)
- 1 EL Butter
- 2–3 tbsp horseradish cream (jar)
- 1 pinch nutmeg, freshly grated
- 2 EL Mehl
preparation
- Wash the fish, pat dry, drizzle with lime juice and cover and chill. Peel the potatoes, wash, cut into pieces and boil in salted water for about 20 minutes.
- Whisk together mustard, vinegar, salt and pepper. Rinse herbs, shake dry and chop. Rinse the anchovy fillets in cold water, pat dry and chop finely. Also chop the capers. Mix the herbs, anchovies, capers and 4 tbsp oil with the vinegar mixture.
- Drain and mash potatoes. Stir the cream, butter, horseradish, salt, pepper and freshly grated nutmeg into the potatoes.
- Pat the fish dry, season, dredge in flour. Heat the remaining oil, fry the fish for 5-8 minutes per side. Serve fish with herb sauce and mashed potatoes.
