ingredients

for 12 servings
  • 1 handful of herbs (e.g. parsley, basil, thyme)
  • 3 spring onions
  • 150 g Emmentaler
  • 1 red pepper
  • 250 g gluten-free rolled oats
  • 2 teaspoons of baking soda
  • 1/2 tsp ground cumin
  • 1 tsp salt
  • pepper from the grinder
  • 2 Eggs (M)
  • 75 ml olive oil
  • 250 ml buttermilk
  • Also: vegetable oil and flour for the baking sheet

preparation

  1. Preheat the oven to 180 degrees. Brush the wells of a muffin pan with oil and dust with flour. Rinse the herbs, shake dry, pluck the leaves and chop finely. Clean and rinse the spring onions and cut into fine rings. Grate the Emmental and finely dice the peppers.
  2. Mix the flour with the baking powder, cumin, salt and pepper. Whisk the eggs with the olive oil and buttermilk and stir into the dry ingredients. Mix in the herbs with the spring onions, cheese and diced peppers and pour the batter into the cavities of the baking tin. Bake in the preheated oven for approx. 25 minutes until golden brown.
  3. Allow the muffins to cool for about 15 minutes, remove from the mold and leave to cool completely on a wire rack.
