ingredients

for 12 servings
  • 10 grams of fresh yeast
  • 300 g gluten-free rolled oats
  • 2 tbsp olive oil
  • salt
  • 6 Mushrooms
  • 4 sprigs of basil
  • 80 g tomato passata (canned)
  • 2 THE Tomatenmark
  • 1/2 tsp dried oregano
  • pepper from the grinder
  • 80 g cooked ham (sliced)
  • 100g grated mozzarella
  • Also: flour for the work surface

preparation

  1. Mix the yeast with approx. 180 ml lukewarm water. In a bowl, knead the oatmeal, 1 tbsp olive oil and 1/2 tsp salt into a dough. Cover and leave to rise for approx. 45 minutes.
  2. For the topping, clean the mushrooms and cut into thin slices. Rinse the basil, shake dry and pluck off the leaves. Put a few leaves aside for garnish. Mix the tomato passata with the tomato paste and oregano and season with salt and pepper.
  3. Preheat the oven to 200 degrees. Brush the wells of a muffin tin with 1 tablespoon olive oil. Roll out the dough into a rectangle on a floured work surface. Spread the tomato paste on the dough. Top with ham and mushrooms. Sprinkle with basil and half of the grated mozzarella.
  4. Roll up, cut into 12 pieces and place in the wells of the muffin tin. Sprinkle with the remaining cheese and bake in the preheated oven for approx. 25 minutes until golden brown. Remove and serve garnished with basil.

Vegetarians can either omit the cooked ham or use vegetarian alternatives.
