Recipe for delicious pumpkin muffins
Our delicious pumpkin muffins are perfect for Halloween. But the healthy treat is not only perfect for the Halloween buffet, but also as a nutritious treat for in between meals. The best? The ingredients are also gluten-free.

- 225 g pumpkin puree
- 150 grams of buckwheat flour
- 80 g virgin coconut oil
- 60 ml unsweetened almond milk
- 60 g maple syrup
- 60 g gluten-free rolled oats
- 25g naturally sweetened chocolate chips
- 1 ripe banana
- 1 tsp cream of tartar baking powder
preparation
- Preheat the oven to 170° and grease a muffin tin with coconut oil.
- Melt the coconut oil in a pan, mix the chia seeds with water in a bowl and set aside for ten minutes.
- Chop the oatmeal in a blender and set aside.
- Blend the maple syrup, coconut oil and the banana in a blender. Add the salt, vanilla, pumpkin puree, baking powder, almond milk and the chia mix.
- Stir in the ground oats, buckwheat flour, and chocolate chips. If the batter is too dry, add a little almond milk.
- Pour the batter into the muffin tin and decorate with pumpkin seeds and oatmeal. Bake in the oven for about 30 minutes
