  • 800 g small potatoes
  • salt
  • 1 bunch of chives
  • 1 bunch coriander
  • 100 g green olives (pitted)
  • 200 ml hot vegetable stock
  • 3 tbsp olive oil
  • 1 EL Senf
  • pepper from the grinder
  • 1 onion
  • 100 g spinach leaves
  • 1 EL Butter
  • 300 g herring fillet, boned (e.g. from the north-east Atlantic)
  • 2 eggs (size M)
  • 4 EL Semmelbrösel

preparation

  1. Wash the potatoes and boil them in salted water. Chop the herbs separately. Slice the olives. Peel potatoes, cut into slices. Mix in the olives and chives. Whisk broth with 1 tablespoon oil, mustard, salt and pepper. Mix with the potatoes.
  2. Peel and chop the onion. Wash and chop the spinach. Heat butter, sauté onion and spinach. Spice up. Puree fish with eggs in blender. Stir in the breadcrumbs and drained spinach, season.
  3. Heat the rest of the oil. Using a tablespoon, place 12 biscuits from the fish batter into the pan, flatten slightly and fry for about 4 minutes on each side. Serve with a salad.
