Healthy rice and spinach stir-fry with salmon

Our rice and spinach pan with salmon not only tastes good, it also provides you with many important vitamins and nutrients. - 400 g Basmatireis
- 1/2 TL Currypulver
- 1 onion
- 1 clove of garlic
- 1 small chili pepper
- 1 small leek
- 100 g frozen leaf spinach
- 4 Lachsfilets (125g each)
- 2 tbsp lemon juice
- Salt, pepper from the mill
- 2 tbsp olive oil
- 100 ml vegetable broth
preparation
- Cook the rice with curry powder according to the instructions on the packet for about 15 minutes until al dente. Drain and let cool slightly. Peel and chop onion and garlic. Wash the chili pepper, halve lengthways, remove the seeds and cut into fine strips. Clean and wash the leek and cut into fine rings. Drain the spinach in a colander.
- Wash the salmon, pat dry and sprinkle with lemon juice. Spice up. heat oil. Fry the fish over a medium heat for 5-8 minutes per side, remove and keep warm.
- Sauté onion and garlic in pan. Add the leeks and continue to sauté for about 5 minutes. Deglaze with the broth. Add the spinach, chilli strips and rice and mix together. Spice up. Serve the fish on the rice pan.
