Carrot, carrot or carrot cake – the delicious cake, the basic ingredient of which is carrots, comes from Switzerland. But don’t worry: you can hardly taste the carrots in the finished cake. It is a classic Easter cake and cannot be missed during the Easter holidays. Our recipe for low-carb carrot cake is particularly tasty and low in calories.

- 250 g almond flour
- 200 g ground almonds
- 350 grams of carrots
- 140 grams of sugar
- 4 Eggs
- 250 ml oil (tasteless, e.g. vegetable oil)
- 2 teaspoons of baking soda
- 1 vanilla bean
- 2 tsp cinnamon
- a pinch of salt
preparation
- Preheat the oven to 180°. Finely grate all the carrots.
- Put the sugar, almond flour, almonds, cinnamon, baking powder and a pinch of salt in a bowl.
- Add the oil, eggs and pulp of the vanilla pod to the mixture and mix everything together.
- Add the carrots and stir again. Then put in a springform pan and bake in the oven for 35-40 minutes at 170°. Finished!
