Carrot, carrot or carrot cake – the delicious cake, the basic ingredient of which is carrots, comes from Switzerland. But don’t worry: you can hardly taste the carrots in the finished cake. It is a classic Easter cake and cannot be missed during the Easter holidays. Our recipe for low-carb carrot cake is particularly tasty and low in calories.

  • 250 g almond flour
  • 200 g ground almonds
  • 350 grams of carrots
  • 140 grams of sugar
  • 4 Eggs
  • 250 ml oil (tasteless, e.g. vegetable oil)
  • 2 teaspoons of baking soda
  • 1 vanilla bean
  • 2 tsp cinnamon
  • a pinch of salt

preparation

  1. Preheat the oven to 180°. Finely grate all the carrots.
  2. Put the sugar, almond flour, almonds, cinnamon, baking powder and a pinch of salt in a bowl.
  3. Add the oil, eggs and pulp of the vanilla pod to the mixture and mix everything together.
  4. Add the carrots and stir again. Then put in a springform pan and bake in the oven for 35-40 minutes at 170°. Finished!
