Baking without flour: recipe for delicious grain rolls

An extended Sunday breakfast shouldn’t be without fresh bread and rolls, right? They taste really good when you bake them yourself. We have a simple and delicious recipe for healthy grain rolls. The special highlight: Instead of flour, we use oat flakes. 

Healthy grain rolls without flour

Our homemade grain rolls are easy to prepare and taste like they were fresh from the baker. Instead of wheat flour, we use oat flakes, which are bursting with minerals such as magnesium or iron and fiber. We wish you lots of fun baking and bon appétit!

ingredients

for 10 servings
  • 350 grams of rolled oats
  • 1 cube of fresh yeast (42 g)
  • 1 tsp salt
  • 2 tbsp sunflower oil
  • 100 g sourdough (ready-made product, from the baker; or 1 tbsp dry sourdough plus 80 ml water)
  • 50 g coarse spelled flakes
  • flour for the work surface
  • 2 tablespoons each of oatmeal, sunflower seeds, linseed, sesame and poppy seeds

Preparation of the delicious grain rolls

  1. Sift the rolled oats into a bowl and make a well in the middle. Crumble in the yeast and mix with 2-3 tablespoons of lukewarm water and some flour. Cover and let rise in a warm place for 10 minutes.
  2. Mix the oil, sourdough, 180 ml lukewarm water and spelled flakes with the pre-dough for 10 minutes using the dough hook of a hand mixer (or in the food processor) to form a smooth dough. Cover and let rise in a warm place for 1 hour.
  3. Turn the dough out onto the floured work surface, divide into 10 portions using a dough card and roll them out. Immediately press the balls of dough into the various flakes, kernels and seeds and place on a baking tray lined with baking paper.
  4. Cover and leave the rolls to prove for another 20 minutes. Preheat the oven to 220 °C, while also heating a saucepan on the bottom. Put the ice cubes in the pan and bake the rolls for approx. 20 minutes. After 10 minutes let the steam escape.

Recipe Tips

Arrange the buns in a contiguous wheel. To do this, place three pieces of dough in the middle and place the rest around the outside in a ring without a gap.

How to properly store grain rolls

Either freeze the rolls or, ideally, place them in an air-permeable bread box or in a  Roman pot so that they stay fresh for a long time. Do not store the baked goods in a plastic bag. Since the moisture cannot escape, mold quickly threatens.
