Crêpes with light stracciatella quark

Roasted tiger nuts make the filling nutty and keep you full for a long time. Quark provides valuable protein and wholemeal flour provides healthy fiber, vitamins and minerals.

for 2 servings
- 75 g whole wheat flour (finely ground)
- 1 packet of vanilla sugar
- 150ml milk
- 1 No.
- 2 tbsp ground tigernuts
- 200 g quark (20% fat)
- 3 tbsp runny honey
- 50 g Zartbitterschokolade (mind. 60% Cacaoanteil)
- 1 tbsp clarified butter
preparation
- Mix flour, vanilla sugar, milk and egg. Let the dough swell for about 10 minutes.
- Roast the tigernuts in a pan without fat. Let cool down.
- Mix together the quark, 2 tbsp honey and tigernuts. Chop the chocolate and stir half into the quark.
- Heat the lard in a coated pan. Bake two crepes from the batter.
- Spread the stracciatella quark on the crêpes, fold over. Sprinkle with the remaining chocolate and drizzle with honey. Garnish with almonds if you like.
