for 2 servings
  • 75 g whole wheat flour (finely ground)
  • 1 packet of vanilla sugar
  • 150ml milk
  • 1 No.
  • 2 tbsp ground tigernuts
  • 200 g quark (20% fat)
  • 3 tbsp runny honey
  • 50 g Zartbitterschokolade (mind. 60% Cacaoanteil)
  • 1 tbsp clarified butter

preparation

  1. Mix flour, vanilla sugar, milk and egg. Let the dough swell for about 10 minutes.
  2. Roast the tigernuts in a pan without fat. Let cool down.
  3. Mix together the quark, 2 tbsp honey and tigernuts. Chop the chocolate and stir half into the quark.
  4. Heat the lard in a coated pan. Bake two crepes from the batter.
  5. Spread the stracciatella quark on the crêpes, fold over. Sprinkle with the remaining chocolate and drizzle with honey. Garnish with almonds if you like.
