  • 4 sprigs of thyme
  • 1/2 unwaxed lemon
  • 3 tbsp olive oil
  • sea-salt
  • pepper from the grinder
  • 500 g Wildlachsfilet
  • 100 g dried dates
  • wooden skewers
  • 300 grams of green beans
  • 50 grams of sun-dried tomatoes
  • 200 g artichoke base

preparation

  1. Wash the thyme, shake dry and pluck off the leaves. Grate the lemon zest and squeeze the fruit. Mix the thyme with the lemon zest and 1 tablespoon of the oil. Season with salt and pepper. Rinse wild salmon, pat dry and dice. Thread 8 wooden skewers alternately with dates. Marinate in the lemon marinade for about 15 minutes.
  2. Wash green beans, cut off the ends. Cook in a little salted water for about 8 minutes. Drain and let cool. Soak tomatoes in water for about 10 minutes. Drain the artichokes. Cut the batavia and radicchio into pieces, wash and spin dry.
  3. Deseed and chop the chili. Whisk together the remaining oil, lemon juice, mustard, vinegar, salt and pepper. Drain the sundried tomatoes well and cut into small cubes. Add to the dressing. Wash chives, cut into small pieces. Mix salads with beans, artichokes and dressing. Heat a pan. Sear the skewers all over for about 5 minutes. Serve with the salad and sprinkle with chives.
