Recipe for tarte flambée with cauliflower base
Do you love flammkuchen as much as we do? Then you absolutely have to try our nifty recipe, which is gluten-free and significantly lower in calories. We do without flour and cover the tarte flambée with lean bacon and fresh tomatoes.

for 4 servings
- 1 cauliflower (approx. 800 g)
- 200 g middle-aged Gouda (in one piece)
- 2 Eggs (S)
- salt
- 1 clove of garlic
- 200 g sour cream
- Pfeffer
- 100 g smoked bacon (in one piece)
- 2 spring onions
- 8 sprigs of thyme
- 300 g Cocktailtomaten
preparation
- Clean and wash the cauliflower and grate it coarsely on a vegetable grater. Finely grate the cheese. Mix the cauliflower, eggs and cheese and season with salt.
- Line two baking sheets with baking paper. Halve the cauliflower mixture and press each half onto a baking sheet to form a flat Tarte flambée base (approx. 28 cm in diameter). Bake in a preheated oven at 200°C for approx. 10 minutes.
- Meanwhile, peel and finely chop the garlic. Mix together the sour cream and garlic, season with salt and pepper. Cut the bacon into fine strips or cubes, clean and wash the spring onions and cut into rings. Wash the thyme, shake dry and pluck off the leaves. Wash and halve tomatoes.
- Spread the sour cream over the cauliflower bases and smooth out. Top with bacon, spring onions and tomatoes and sprinkle with thyme. Bake in the oven for about 15 minutes.
