Briefly explained: What is Skyr?
If you ask Icelanders about the secret of good and robust health, the answer is “Skyr”, of course with a throaty “r” at the end. Icelanders have been eating low-fat quark since Viking times. However, “low-fat quark” is only an auxiliary term, because skyr eludes the usual categories and is somewhere in the golden mean of yoghurt, quark and cream cheese. Traditionally, Icelandic farmers made their own skyr from the milk of their sheep and cows. For this purpose, skimmed milk was pasteurized and then enriched with valuable bacterial cultures. The milk fermented overnight. During this acidification, proteins flocculated and formed a thick mass reminiscent of yoghurt. In the last step, the farmers had to screen their fermented milk product to remove the whey it contained. The result was creamy skyr.
In the meantime, however, skyr production in Iceland is also firmly in industrial hands. Even in Scandinavian countries, the production of the traditional Icelandic quark has picked up speed. A Danish dairy group even produces Icelandic-style Skyr here in Germany, so great is the demand for the delicious Viking yoghurt . And he really has it all.
