for 4 servings
  • 1 kg of green asparagus
  • 300 g cherry tomatoes
  • salt
  • Pfeffer
  • Zucker
  • juice from one lemon
  • 50ml olive oil
  • 1/2 bunch basil
  • 50g Parmesan cheese

preparation

  1. Clean the asparagus and cut off the woody ends. If necessary, peel the asparagus spears in the lower third. Cook in salted water for approx. 5 minutes until al dente, immediately cool in ice water. Place in a colander and let drain.
  2. Wash and halve the cherry tomatoes. Mix a pinch each of salt, sugar and pepper with the lemon juice in a bowl. Beat in the oil. Marinate the asparagus and tomatoes with the vinaigrette. Put both on the plate.
  3. Pluck the basil leaves, cut into strips and sprinkle on top. Serve with shaved parmesan.
