Recipe: Marinated asparagus with cherry tomatoes and parmesan
With these instructions, you can easily make marinated asparagus yourself. With cherry tomatoes and parmesan, it gets a strong umami flavor and is ideal as a starter or snack.

- 1 kg of green asparagus
- 300 g cherry tomatoes
- salt
- Pfeffer
- Zucker
- juice from one lemon
- 50ml olive oil
- 1/2 bunch basil
- 50g Parmesan cheese
preparation
- Clean the asparagus and cut off the woody ends. If necessary, peel the asparagus spears in the lower third. Cook in salted water for approx. 5 minutes until al dente, immediately cool in ice water. Place in a colander and let drain.
- Wash and halve the cherry tomatoes. Mix a pinch each of salt, sugar and pepper with the lemon juice in a bowl. Beat in the oil. Marinate the asparagus and tomatoes with the vinaigrette. Put both on the plate.
- Pluck the basil leaves, cut into strips and sprinkle on top. Serve with shaved parmesan.
