Protein Banana Bread Recipe with Oatmeal

Do you eat low-carb or are you currently on a diet? You can enjoy our healthy low-carb protein banana bread without a guilty conscience. We reduce the flour with oatmeal, eliminate industrial sugar and add protein powder and extra protein. Our banana bread is therefore a real filling and quick to make.

  • 2 ripe bananas
  • 50 g ground oat flakes
  • 50 g protein powder e.g. B. vanilla, banana or chocolate
  • 60 ml milk
  • 3 eggs + 2 egg whites
  • 2 tablespoons flour or starch
  • 1/2 tsp baking powder

preparation

  1. Mash the bananas with a fork. In a blender, grind the rolled oats into flour and mix with protein powder, baking powder and flour.
  2. Mix the banana puree with the 3 eggs. Meanwhile, beat 2 egg whites until stiff.
  3. Add the banana-egg mix to the dry mass. Pour in the milk and stir everything together.
  4. Carefully fold the whipped cream into the mixture.
  5. Fill the dough into a loaf pan and bake at 160° C for approx. 40 – 45 minutes.

Recipe Tips

To keep the banana bread fresh for as long as possible, you can store it in the fridge. You can also freeze the bread in portions. Simply slice the bread and pack it airtight. If you let the banana bread thaw at room temperature, hardly any condensation will form and the juicy consistency of the healthy cake will be preserved.
