  • 4 eggs (large)
  • 4 tablespoons of milk
  • 160 g almond flour
  • 120 g coconut flour
  • 140 g butter (soft)
  • 45 g xylite (or alternatively coconut sugar)
  • 1 teaspoon Baking powder
  • 1 tsp ground vanilla
  • 1 TL Guarkernmehl
  • 45 g erythritol (or coconut sugar)
  • 3 small pinches of salt
  • Additionally for light biscuits: 120 g dark chocolate without sugar (roughly chopped, for the decoration), 80 g white chocolate without sugar (finely chopped or grated, for the dough)
  • Additionally for dark biscuits: 4 tbsp cocoa powder, 120 g white chocolate without sugar (roughly chopped, for decoration), 80 g dark chocolate without sugar (finely chopped or grated, for the dough), 3 tbsp milk (if required)

preparation

  1. First chop or grate the chocolate for the dough very finely: Use dark chocolate for dark cookies and white chocolate for light cookies.
  2. Beat the softened butter with xylitol and erythritol until fluffy. Then beat in the eggs one at a time.

  5. First, shape the cookies with wet hands and create balls from the dough, which you then press flat on a baking sheet. Decorate the cookies on the tray with the chocolate chunks. Bake for about 11-13 minutes.
  6. When you take the cookies out of the oven, make sure they are still soft, as they will harden as they cool.
