  • 125 g coconut shells
  • Mark 1/2 vanilla bean
  • 50 g birch sugar
  • 4 egg whites
  • 1 pinch of cinnamon

preparation

  1. Preheat the oven to 150 degrees. Lay out parchment paper on the baking sheet.
  2. Beat the egg whites stiff. Mix in the birch sugar while stirring.
  3. Fold the grated coconut, cinnamon and vanilla seeds into the beaten egg whites.
  4. Using a tablespoon or piping bag, scoop the batter onto the baking sheet.
  5. Bake the cookies for 20-25 minutes.

If you have baked the cookies in the oven for too long, there is a simple trick to soften the cookies again. Put an apple in the cookie jar. After two days the pastry should be softer again as it has absorbed the moisture from the apple.
