Quickly prepared and low in calories: cheesecake with pineapple

The star of our cake is the healthy pineapple. It is low in calories but rich in potassium and trace elements such as copper and zinc. Vitamin C is also found in the yellow flesh of the pineapple. Combine this with the other ingredients and you have a light and healthy treat that you can enjoy with peace of mind at 121 calories per serving.

ingredients
- 100 ml milk (1.5% fat)
- 3 slices of pineapple
- 500 g low-fat quark
- 3 Eggs
- 100 grams of sugar
- 1 small organic lemon
- 1 bag of vanilla pudding powder
- 1 tbsp powdered sugar
- 1 tsp cinnamon
preparation
- Cut the pineapple into small pieces. Rinse the lemon in hot water, pat dry and finely grate the zest. Halve the lemon and squeeze out the juice.
- Put the lemon juice and zest in a bowl with the quark, sugar, eggs, milk, custard powder and cinnamon and mix to form a smooth batter.
- Fold in the pineapple pieces, line a baking tin with baking paper, pour the batter into the tin and bake the cake in a preheated oven at 180°C for about 55 minutes.
- Let the cake cool on a wire rack, carefully remove it from the mold and place it on a plate. Dust the cheesecake with powdered sugar. The cake is ready!
