Strawberry jam with coconut
Do you love strawberries as much as we do? The sweet fruits are not only tasty, but also extremely healthy because they are low in calories and rich in vitamin C and folic acid. One of the classic strawberry recipes is homemade jam. We have reinterpreted the favorite and refined it exotically with coconut milk. The recipe quantity makes about 4 glasses (400 ml each).

for 4 servings
- 750 grams of strawberries
- 1 organic lime
- 250 g coconut milk
- 5 EL Coconut flock
- 500 g preserving sugar 2:1
preparation
- Wash and trim the strawberries, roughly cut them into pieces and puree them in a sufficiently large saucepan using a hand blender. Wash the lime, finely grate the zest and squeeze out the juice. Add the lime juice and zest, coconut milk, coconut flakes and the preserving sugar to the strawberry puree, mix well and let the mixture stand for 10 minutes.
- Bring the strawberry mixture to a boil, stirring constantly. Cook over high heat for 4 minutes while stirring.
- Immediately pour the jam into screw-top or swing-top jars that have been rinsed with hot water and close the jars. Turn the glasses upside down for 5 minutes.
