Italian panini with carrot mango salad and chicken
Need a little inspiration for your Easter brunch? We have a delicious and quick recipe idea – hearty panini with carrot and mango salad and chicken. The Italian sandwich combines different taste components that harmonize perfectly with each other.

for 4 servings
- 2 carrots
- 1 small mango
- 3 tbsp canola oil
- 1-2 TL Obstetrics
- 1 TL Apricot confit
- Salt, pepper from the mill
- 4-6 radishes
- 200 g chicken inner fillets, marinated
- 2-3 sprigs of lemon balm
- 200 g panini (alternatively: baguette rolls)
- 150 g paprika cream cheese
preparation
- Peel the carrots and cut into fine sticks. Peel the mango, remove the stone from the flesh and cut into thin strips. Mix together 2 tablespoons of oil, the vinegar and the jam and season with salt and pepper. Mix the carrots and mango with the dressing.
- Wash, trim and slice the radishes. Fry the chicken fillets with the marinade in the remaining heated oil for approx. 8 minutes on both sides, then cut diagonally into pieces. Wash the lemon balm, pat dry and pluck off the leaves.
- Cut the panini into slices, toast them briefly in the toaster if necessary and spread with the cream cheese. Arrange the carrot-mango salad and the chicken decoratively on top, garnish with radish slices and lemon balm.
