ingredients

for 4 servings
  • 2 carrots
  • 1 small mango
  • 3 tbsp canola oil
  • 1-2 TL Obstetrics
  • 1 TL Apricot confit
  • Salt, pepper from the mill
  • 4-6 radishes
  • 200 g chicken inner fillets, marinated
  • 2-3 sprigs of lemon balm
  • 200 g panini (alternatively: baguette rolls)
  • 150 g paprika cream cheese

preparation

  1. Peel the carrots and cut into fine sticks. Peel the mango, remove the stone from the flesh and cut into thin strips. Mix together 2 tablespoons of oil, the vinegar and the jam and season with salt and pepper. Mix the carrots and mango with the dressing.
  2. Wash, trim and slice the radishes. Fry the chicken fillets with the marinade in the remaining heated oil for approx. 8 minutes on both sides, then cut diagonally into pieces. Wash the lemon balm, pat dry and pluck off the leaves.
  3. Cut the panini into slices, toast them briefly in the toaster if necessary and spread with the cream cheese. Arrange the carrot-mango salad and the chicken decoratively on top, garnish with radish slices and lemon balm.
