Without flour: recipe for delicious zucchini muffins with chili and feta
Our spicy zucchini muffins with chilli and feta prove that muffins don’t always have to be sweet. It doesn’t matter whether it’s breakfast, lunch or dinner – the healthy muffins always taste good. All the better that we can prepare them without flour and instead with healthy oatmeal.

- 1 medium zucchini
- 150 g Feta
- 1 red chili pepper
- 2 Eggs (M)
- 75 ml olive oil
- 200 ml milk (1.5%)
- Salt, pepper from the mill
- 300 g tender oat flakes
- 1 teaspoon Baking powder
- Also: olive oil and flour for the baking sheet
preparation
- Preheat the oven to 180 degrees. Brush the wells of a muffin pan with oil and sprinkle with flour. Rinse the zucchini, grate and drain well. Dice the feta into small pieces. Rinse, trim and finely chop the chili pepper.
- Whisk the eggs with the olive oil, milk, 1/2 teaspoon salt and pepper. Stir in the oatmeal with the baking powder. Mix the zucchini with the feta and chili into the batter. Pour into the cavities of the baking pan. Bake in the preheated oven for approx. 25 minutes until golden brown.
- Allow the muffins to cool for about 10 minutes, remove from the mold and leave to cool completely on a wire rack.
Recipe Tips
If you use gluten-free rolled oats, the recipe is still gluten-free.
