ingredients

- 2 tbsp canola oil
- 60 ml brown rice syrup
- 120 g California walnuts, roughly chopped
- 3 tbsp ground flaxseed
- 2 tbsp pumpkin seeds
- 120 g gluten-free rolled oats
- 300g Greek yogurt
- 150 grams of blueberries
- 70 grams of blackberries
- 2 tbsp honey
preparation
- Preheat the oven to 170 °C (convection: 150 °C, gas: mark 2) and line a springform pan (diameter 23 cm) with baking paper.
- Mix together the rapeseed oil and the brown rice syrup.
- In a mixing bowl, combine one half of the California walnuts, flaxseed, pumpkin seeds and rolled oats and stir in the rice syrup mixture evenly.
- Pour the batter into the springform pan and flatten with the back of a spoon. Bake in the oven for about 20 minutes until the pastry is golden brown and allow to cool completely.
- Mix the yoghurt and berries with the other half of the walnuts and top the granola with it. Drizzle with honey before serving.
