Lose weight with oatmeal: healthy muffins without flour recipe

These muffins prove how easy and delicious baking without flour can be. With oatmeal, bananas and flaxseed, they are also damn healthy. Here is our recipe for no-flour oatmeal muffins.

Healthy no-flour oatmeal muffins recipe

Oatmeal is everywhere these days – and rightly so! They are obtained from the whole grain and are therefore rich in fiber and minerals such as magnesium, iron and zinc. They also have an extremely high protein content with 13 percent protein. Plus, our oatmeal muffins have no added sugar and are a healthy, filling snack for any occasion.

  • 250 g pithy oat flakes
  • 2 teaspoons of baking soda
  • 1 tsp cinnamon
  • 30 grams of raisins
  • 1 tbsp flaxseed
  • 2 ripe bananas
  • 250 ml buttermilk
  • 80 ml sunflower oil
  • Also: sunflower oil for the shape

Preparing the healthy oatmeal muffins

  1. Preheat the oven to 200°C. Brush the wells of a muffin pan with oil.
  2. Mix the rolled oats with the baking powder, cinnamon, raisins and flaxseed. Peel the bananas, finely puree with the buttermilk and oil. Mix in the oatmeal mixture and pour the mixture into the wells.
  3. Bake in the preheated oven for approx. 30 minutes. Remove, allow to cool for about 10 minutes, remove the muffins from the tray and leave to cool completely on a wire rack.

Recipe Tips

  • Oat buttermilk is a particularly good vegan substitute for buttermilk. But you can also replace the buttermilk 1:1 with normal plant -based drinks such as soy, almond or oat milk.
  • If you don’t like raisins, you can use fresh blueberries or raspberries as an alternative.
  • You can also use rapeseed oil instead of sunflower oil.
  • It is best to use ground flaxseed so that your intestines can absorb the nutrients. Popular ground flax seeds in organic quality are available from BioKitchen or Schapfenmühle , for example .
