Healthy Grains Recipes

In Asia and Russia, buckwheat is in every pantry. It was long forgotten by us, but the whole food and organic trend is bringing back the healthy grains.
BUCKWHEAT FLOUR
The finely nutty and slightly beechnut-flavoured flour is ideal for pancakes. Since buckwheat lacks gluten, it is usually mixed with other types of flour for baking . Ground nuts, such as almonds, also serve this purpose.
BUCKWHEAT GREAT
Peeled and then crushed buckwheat grains are offered under this name. The taste (more intense than that of flour) goes well with both spicy and sweet dishes. The groats are cooked either in salt water or milk .
Inside & out – ingredients
Buckwheat is gluten free. Its very high content of lysine (a protein building material) strengthens our bones. Stored grains and groats will keep for a few months. However, buckwheat flour quickly goes rancid. Therefore store in a cool and dark place, consume soon.

Recipe: Buckwheat Zucchini Casserole

For 4 people
  • 275 g buckwheat grains
  • 600 ml vegetable broth
  • 3 Zucchini
  • 3 tbsp olive oil
  • salt
  • 150 g fresh cream
  • 50g grated Parmesan
  • 125 g Mozzarella
First rinse the buckwheat in hot water. Cook in boiling broth for approx. 15 minutes. pour off. Clean and wash the courgettes, cut lengthwise into slices. Fry the courgettes in hot oil and season with salt. Mix together the buckwheat, crème fraîche and cheese. Layer in a casserole dish, alternating with the zucchini slices. Cut the mozzarella into slices and spread on top. Bake at 200 °C for approx. 15 minutes.

Recipe: Groats with compote

For 4 people
  • Mark of 1 vanilla bean
  • 1 cinnamon stick
  • 750 ml milk
  • 2 tbsp sugar
  • 250 g buckwheat groats (medium coarse)
  • 500 g cleaned strawberries
  • 300 g pineapple pulp

Bring the vanilla pulp, cinnamon, milk and sugar to the boil , stir in the grits, simmer for approx. 15 mins. Remove cinnamon stick. Dice the fruit, eat with the porridge.

Recipe: Buckwheat Pancakes

For 4 people
  • 150 grams of buckwheat flour
  • 150 g Dinkelmehl (Type 630)
  • 400ml milk
  • 3 Eggs
  • salt
  • 400 g Feta
  • 6 tomatoes
  • 3 THE Öl
Whisk together the flour, milk, eggs and 1 teaspoon salt. Crumble feta, dice tomatoes. Bake the dough in hot oil to make 6 pancakes, fill with feta and tomatoes.
