Recipe for healthy coconut porridge with almonds and fruit
Porridge is now available in countless variations – and rightly so! Because the porridge is incredibly healthy, keeps you full for hours and protects against food cravings. It gets a little exotic with our delicious coconut porridge, which is not only delicious and healthy, but also vegan. Enjoy your meal!
ingredients
- 400 ml coconut milk
- 200 g tender oat flakes
- 200 grams of blueberries
- 4 EL Kokosraspeln
- 2 medium sized bananas
- 4 small Handful of almonds
preparation
- Boil the coconut milk and stir in the oatmeal.
- Rinse the blueberries carefully if necessary, pat dry. Put some aside for the garnish, add the rest to the rolled oats and heat gently, stirring, for approx. 3 minutes. Pull the pot aside and let it rest for 3 minutes.
- Stir coconut flakes into the berry porridge and divide the porridge evenly into bowls.
- Slice bananas. Garnish the porridge with the banana slices, the remaining blueberries and the almonds.
Recipe Tips
Despite the healthy ingredients, this porridge is quite rich and should easily fill you up for several hours. If you are currently trying to reduce your weight, it is best to use low-fat coconut milk or use a lower-calorie plant-based milk.
If you want to save on sugar, you can simply omit the bananas.
If you don’t like almonds, walnuts make an equally healthy substitute.
