- 120g softened butter
- 100 grams of brown sugar
- 2 Eggs
- 200 g wheat flour (type 550 or 1050)
- 1 1/2 tsp baking powder
- 100 g sour cream
- 100 ml Mandel drink
- 100 g ground flax seeds
- 200 grams of strawberries
- 1 small ripe banana (peeled approx. 100 g)
- Also: butter and breadcrumbs for the mold
preparation
- Preheat the oven to 200°C, grease the loaf tin and sprinkle with breadcrumbs. Beat the butter and sugar until thick. Stir in the eggs one at a time.
- Add the flour, baking powder, sour cream, almond drink and 80 g linseed and stir. Wash, pat dry and trim the strawberries. Peel the banana, cut into small pieces with the strawberries, add to the dough and stir.
- Pour the batter into the prepared loaf pan, sprinkle with the remaining flax seeds and bake in the oven for 50-60 minutes until golden brown.
- Let the banana bread cool down first in the tin, then on a wire rack, cut into slices and serve.
