  • Juice and zest of 1 organic orange
  • 150 g whole milk yoghurt, natural
  • 100 ml vegetable oil
  • 150 grams of sugar
  • 3 Eggs
  • 300 g wheat flour (Type 550)
  • 2 level teaspoons baking powder
  • 75g chopped pistachios
  • 120g powdered sugar
  • Organic orange slices and pistachio nuts for decoration
  • vegetable oil and breadcrumbs for the mold

preparation

  1. Preheat the oven to 180 degrees. Brush the loaf tin with oil and sprinkle with breadcrumbs. In a bowl, mix the orange zest with 2 tablespoons of orange juice, the yoghurt, oil, sugar and eggs until smooth.
  2. Sift the flour with the baking powder over it and mix everything with the chopped pistachios to form a smooth dough. Pour into the mold and spread evenly. Put the loaf tin in the preheated oven and bake on the middle shelf for 50-60 minutes until golden brown. do a chopstick test! Remove and let cool for 15 minutes. Remove from the mold and let cool.
  3. For the icing, mix the powdered sugar with 2-3 teaspoons of orange juice until smooth and drizzle over the cake. Decorate with orange slices and garnish with pistachio nuts.
