ingredients

for 4 servings
  • 75 gr peanuts, roasted and salted
  • 1 bunch coriander
  • 6-8 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 EL Skyr
  • 50ml buttermilk
  • 1 Bio Zitrone
  • 2 tsp canola oil
  • 1 tsp white wine vinegar
  • 1/2 tbsp honey
  • 2-3 pinches of Just Spices Dressing seasoning
  • 1 handful of green beans
  • 2 mini cucumbers
  • 1 Avocado
  • 120 gr Glasnudeln
  • 1 tbsp sesame oil
  • 1/2 Broccoli
  • some Just Spices sea salt
  • some Just Spices Tellicherry pepper

preparation

  1. First, wash and dry the coriander, cut off the ends of the stalks and finely chop the rest.
  2. In a blender, blend the peanuts, coriander, and olive oil into a pesto. Just add a little more olive oil if needed. Then season it all with white wine vinegar.
  3. Wash the lemon in hot water, grate some peel and squeeze the lemon.
  4. Put two teaspoons of the previously prepared pesto, the skyr, the buttermilk, the rapeseed oil, the white wine vinegar and the honey with a dash of lemon juice and the zest in a screw-top jar, close and shake. Then season the whole thing with the fitness dressing seasoning and a little salt.
  5. Heat a large pan with sesame oil and add all the vegetables. Fry at medium heat for about 15 minutes and season with salt and pepper.
  6. To serve, prepare a few glass noodles according to package directions and place in a bowl.
  7. Pour the cooked vegetables on top. Finally, drizzle the dressing over the Green Bowl and top with avocado.
