Gluten free zucchini brownies recipe

Juicy chocolate brownies have it all and are real calorie bombs. That’s why we bake the low carb variant with zucchini and without flour. The low carb brownies are not only particularly low in calories, but also gluten-free! 

Low carb recipe for gluten free brownies with zucchini

Ingredients for about 16 pieces

  • 200 g grated Zucchini
  • 2 tbsp olive oil
  • 2 Eggs
  • 100 g raw cane sugar
  • 80 g almond flour
  • 60 g unsweetened cocoa
  • 2 TL Vanillearoma
  • 2 pinches of salt
  • 1 teaspoon Baking powder
  • 50 g walnuts for sprinkling

preparation

Preheat the oven to 165 degrees.
Wash the zucchini and pat dry with kitchen paper. Then grate finely with a grater.
Mix all the ingredients together except for the walnuts and pour the mixture onto a baking tray (approx. 29×42 cm) lined with baking paper.
Now chop the walnuts and sprinkle them over the dough. Then bake everything in the hot oven for about 40 minutes.
