- 80 g arugula
- 30 grams of pine nuts
- 4 sprigs of basil
- 600 g (preferably large) strawberries
- 500 g Mozzarella
- 100 ml apple juice
- 2 tbsp olive oil
- 1 TL Agavendicksaft
- Salt, pepper from the mill
preparation
- Wash the rocket, spin dry and tear into bite-sized pieces. Toast the pine nuts in a non-stick pan until golden brown. Wash the basil, pat dry and pluck off the leaves.
- Wash and trim the strawberries (set aside 2 strawberries for the dressing). Drain the mozzarella, cut into slices and arrange on a platter with the strawberries.
- For the dressing, puree the reserved strawberries, apple juice, oil and agave syrup, season with salt and pepper. Drizzle the strawberry and mozzarella mixture with the dressing and serve garnished with arugula, pine nuts and basil.
