What actually is gluten?
It makes dough elastic and bread crispy: Gluten is a natural protein found in wheat and other grains such as rye, spelled and barley. If there is gluten intolerance, gluten can sometimes trigger severe physical symptoms: a feeling of fullness, abdominal pain and cramps, nausea, tiredness and even migraines or skin rashes. Gluten intolerance includes celiac disease, gluten/wheat sensitivity and wheat allergy.
What is celiac disease?
Because of the non-specific symptoms, many of those affected do not notice for years that they suffer from gluten intolerance. Only going to the doctor creates clarity. Once the diagnosis has been established, it often helps those affected to consistently avoid foods containing gluten. The good news: thanks to the many gluten-free alternatives, you can still enjoy pizza, pasta and the like. And all naturally gluten-free foods such as fish, meat, rice, fruit and vegetables are safe to eat anyway.
