Zutaten

für 2 Portionen
  • 400 ml Tomatensaft
  • 150 g Mango
  • 100 g Mozzarella
  • 100 g Tomaten
  • 2 Schalotten
  • 20 g frischen Ingwer
  • etwas Zucker
  • feines Meersalz

Zubereitung

  1. Peel the ginger and cut it into small pieces. Peel the shallots and also cut them into fine cubes. Season the tomato juice with sea salt and sugar. Then put the soup in the fridge for at least an hour.
  2. Drain the mozzarella and cut into small cubes. Peel the mango and cut into small cubes. The tomatoes are quartered.
  3. Just before serving, mix the mozzarella, mango and tomato pieces into the soup. Served with toasted white bread.
