ingredients

for 4 servings
  • 400 g tender rolled oats (gluten-free)
  • 1/2 cube of yeast (21 g)
  • 1 tablespoon of sugar
  • 50 grams of olive oil
  • salt
  • 50 g walnut kernels
  • 250 g fresh goat cheese
  • 2 cloves of garlic
  • 1 EL Rosemary needles
  • 50 grams of liquid honey
  • 80 g arugula
  • Also: flour for working, olive oil for drizzling

preparation

  1. Place the rolled oats in a bowl, make a well in the middle, crumble in the yeast, sprinkle with sugar, mix with 2-3 tablespoons of lukewarm water and leave covered in a warm place for approx. 20 minutes.
  2. Add oil, 1 tsp salt and approx. 170 ml lukewarm water, knead into a smooth dough and leave to rise for approx. 1 hour.
  3. Preheat the oven to 220°C and line a baking tray with baking paper. Chop the walnut kernels. Roll out the dough on the baking paper to form a large flatbread, sprinkle with the walnuts, press them in slightly and drizzle with a little oil. Crumble the goat’s cream cheese, spread on top and pre-bake in the oven for approx. 10 minutes.
  4. Peel the garlic and finely chop with the rosemary needles, heat with the honey in a small saucepan. Spread the rosemary-garlic-honey on the flatbread and bake for another 5-10 minutes.
  5. Wash the rocket, spin dry, cover the pizza flatbreads with it, cut into pieces and serve.
