ingredients

for 4 servings
  • 1 onion
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • 400g of tomato passata
  • salt, pepper, sugar
  • 1 tsp dried oregano
  • 1 cauliflower (approx. 1 kg)
  • 300 g Cocktailtomaten
  • 2 spring onions
  • 250 g Mozzarella
  • 200 g Gouda (in one piece)
  • 1/2 cup basil

preparation

  1. For the tomato sauce, peel the onion and garlic, cut into fine cubes and sauté in the olive oil. Add the tomato passata, bring to the boil and simmer for about 5 minutes while stirring. Season generously with salt, pepper, 1 pinch of sugar and oregano.
  2. Clean the cauliflower, divide into large florets and wash. Pre-cook in boiling salted water for approx. 4 minutes. Pour into a sieve, rinse in cold water. Wash tomatoes and cut in half lengthwise. Clean and wash the spring onions and cut into fine rings. Cut the mozzarella into slices.
  3. For the pizza crusts, coarsely grate the Gouda and cauliflower and mix. Line two baking sheets with parchment paper. Halve the cauliflower mixture and shape each tray into an oval pizza base (approx. 35 cm long). Pre-bake one after the other in the preheated oven at 225 °C for approx. 10 minutes.
  4. Spread the tomato sauce, tomatoes, spring onions and mozzarella on the bases and bake for approx. 12 minutes each. Serve the finished cauliflower pizza sprinkled with basil leaves.
