Potatoes are healthy, delicious and versatile. Whether as mashed potatoes, fried or jacket potatoes – the healthy tubers always taste good. They also provide you with vitamin C, potassium and B vitamins, among other things. Potatoes are particularly delicious in our Italian potato salad. The best? - approx. 8 large waxy potatoes (approx. 600 g)
- 125 g cherry tomatoes
- 90 g of Parma ham
- 50ml milk
- 125 g Salatcreme
- 30 grams of pine nuts
- 50 g basil pesto
- 3 tablespoons white balsamic vinegar
- some basil
- salt and pepper
preparation
- The potatoes are thoroughly washed and cooked in boiling water for 20 minutes. Rinse the potatoes, peel off the peel and cut the potatoes into slices.
- The pine nuts are roasted in the pan without fat. Take them out when they are brown and then let the kernels cool.
- Then wash the tomatoes and cut them in half.
- For the dressing, mix the salad cream with the milk and pesto and season with salt, pepper and balsamic vinegar.
- Now put everything in a bowl and mix well. The potato salad then goes into the fridge overnight. The next morning, add some basil, pluck the Parma ham into small pieces and mix it with the salad.
