  • 1 clove of garlic
  • 1 organic lime
  • 1 bunch of spring onions
  • 600 g cod (from the Atlantic or Pacific)
  • salt
  • pepper from the grinder
  • 8 large chard leaves
  • 1 Friesalat
  • 1 bunch of purslane
  • 1 bunch of watercress
  • 300 g cucumber
  • 150 g snow peas
  • 2 tbsp olive oil
  • 125 ml warm vegetable stock
  • 2 tablespoons light balsamic vinegar
  • 1 tbsp honey

preparation

  1. Peel and chop the garlic. Grate the zest from the lime and squeeze the fruit. Wash, trim and cut the spring onions into pieces. Rinse the fish fillet, pat dry and cut into 8 pieces. Spice up.
  2. Preheat the oven to 180 degrees (convection: 160 degrees). Wash the chard and remove the white stalk. Scatter the garlic, scallions, and lime zest on each leaf. Put the fish on top, close the sheet around it, fasten with twine. Place the fish on a baking sheet (lined with parchment paper). Bake for about 20 minutes.
  3. Divide lettuce and cress, wash. Wash, halve and deseed the cucumber. Wash sugar snap peas. Cut both into slices. Whisk together the oil, broth, lime juice, vinegar, and honey. Spice up. Mix with the lettuce, cress and vegetables. Serve with fish.
