ingredients
- 2 apples
- 400 grams of blueberries
- 150 g Coconut grater
- 150 g ground almonds
- 1 THE Instant coffee
- 1 tsp baking powder (gluten free)
- 250 g butter, room temperature
- 200 grams of brown sugar
- 1 Msp. ground bourbon vanilla
- 5 Eggs (M)
- 200 g coconut cream
- Coconut chips for garnish
- Vegetable oil and flour for the mold
preparation
- Measure or weigh all required ingredients and have them ready. Preheat the oven to 180 degrees. Brush the baking pan with oil and dust with flour.
- Wash, quarter, core and dice the apples. Rinse the blueberries, sort, pat dry. Set aside some berries for garnish.
- Mix the grated coconut with the almonds, coffee and baking powder.
- Cream the butter with the sugar and vanilla. Gradually mix in the eggs. Add the almond mixture and work everything into a smooth dough.
- Fold in the apples and half the berries, pour the batter into the prepared dish.
- Scatter the remaining berries over the dough and bake the cake in the preheated oven for approx. 50 minutes. Remove and let cool on a wire rack.
- Whip the coconut cream until fluffy. Divide the cake into pieces and garnish with the coconut cream. Decorate with the reserved blueberries and coconut chips.
