Strawberry Mascarpone Ice Cream
Ice cream is a must in summer! The cool snack tastes particularly good when you make it yourself. So try our fruity-fresh recipe for strawberry mascarpone ice cream, which is refined with Greek cream yoghurt.

- 150 grams of sugar
- Zest of 1 organic lemon
- mint leaves (to taste)
- 100 g Greek cream yoghurt
- 300 g Mascarpone
- 400 grams of strawberries
- about 1 tbsp powdered sugar
preparation
- Boil 260 ml water with sugar and lemon zest so that everything combines into a syrup. Heat the mint leaves briefly, remove.
- Stir the yoghurt into the warm syrup. Stir cold in a bowl with ice cubes. Stir in the mascarpone.
- Wash, clean and puree the strawberries. Then pass through a sieve. Flavor with powdered sugar. Pour into popsicle molds (each approx. 150 ml) alternately with the cream, freeze. Insert wooden sticks. Freeze for at least 4 hours, preferably overnight.
