Strawberry Cream Cheese Slices: perfect for spring and summer
Our delicious strawberry cream cheese slices are healthy and low in calories. Strawberries should be a regular part of the menu in the season anyway – they contain various important nutrients such as potassium, iron and zinc as well as so-called polyphenols, which are said to protect against cancer and cardiovascular diseases. The taste of the strawberries really comes into its own in our delicious cake. Best of all, one piece contains only 153 calories.

ingredients
- 500 grams of strawberries
- 400 g granulated cream cheese
- 8 ladyfingers
- 8 sheets of white gelatin
- 1/2 lemon
- 1 bag of vanilla sugar
- 1 tbsp powdered sugar
- optional: sweetener
preparation
- Wash the strawberries and pat dry.
- Set aside six strawberries, puree the remaining strawberries and strain through a sieve.
- Rinse the lemon half in hot water, rub dry, grate a teaspoon of lemon zest and squeeze the juice from the lemon.
- Soak the gelatine in cold water for about 5 minutes. Rinse a rectangular mold with cold water and line it with cling film so that there is an overhang of about 5 cm.
- Line the bottom with ladyfingers. Squeeze out the gelatin and heat in a small saucepan, stirring, until dissolved. Using a whisk, thoroughly stir two tablespoons of the strawberry puree into the gelatine.
- Add the mixture to the remaining strawberry puree and stir in the lemon zest and vanilla sugar. Mix in the cream cheese, add 2 tablespoons of lemon juice and sweetener, if desired.
- Pour the cream cheese and strawberry mixture into the mold and smooth out. Then put the cream cheese and strawberry slices in the fridge for at least three hours.
- Use the foil to turn the strawberry cake out of the pan, cut the cake into six equal pieces, arrange them on a plate with the biscuit side up and dust the cake with icing sugar. Slice the remaining strawberries and spread them on the slices.
