  • 2 organic oranges
  • 2 tbsp sugar
  • about 4 stalks of tarragon
  • 500 grams of strawberries
  • 60 g soft butter
  • 75 grams of sugar
  • 1 pinch of salt
  • 1 packet of bourbon vanilla sugar
  • 2 Eggs
  • 100 grams of flour
  • 25 g cornstarch
  • 1⁄2 tsp baking powder
  • 1/8 cup buttermilk
  • 2-3 tbsp clarified butter
  • 1-2 tbsp powdered sugar

preparation

  1. Wash the oranges in hot water and rub them dry. Grate zest from 1 orange, squeeze oranges. Bring the juice, zest and sugar to the boil in a small saucepan. Pull off the stove. Add the tarragon leaves and leave to infuse. Let cool down.
  2. Wash the strawberries and drain on kitchen paper. Clean the strawberries and chop them up depending on their size. Add the cooled orange juice, let the strawberries soak for about 1 hour.
  3. Cream together the butter, sugar, salt and vanilla sugar. Beat in eggs one at a time. Mix the flour, starch and baking powder, stir in alternately with the buttermilk. Leave the dough to rest for about 30 minutes.
  4. Heat the waffle iron, brush the baking surfaces with clarified butter. Add about 1 ladleful of batter to each and bake on a medium setting for 3-4 minutes. Remove waffles, place on a wire rack. Divide into segments as desired. Dust with powdered sugar. Serve with strawberry sauce.
